MASALA CHAI WITH LEMON GRASS

A refreshing drink with lemongrass and powdered spices.

Ingredients
Black peppercorns 16
Cinnamon 1 inch stick
Cloves 4
Green cardamoms 4
Dry ginger powder (soonth) 1 teaspoon
Milk 2 cups
Lemon grass 4-5 stalks
Chai masala 1/2 teaspoon
Sugar 4 teaspoons
Tea leaves 4 teaspoons
Method
Dry grind peppercorns, cinnamon, cloves and green cardamoms to a fine powder. Let it cool completely then sieve. Mix in soonth. Store in an airtight container. Use the masala as and when required to make tea.

To make tea, mix two cups of milk and two cups of water and bring to a boil. Add, fresh lemon grass stalks, tea leaves and chai masala. Let it boil for a minute, add sugar. When it comes to a boil, lower heat and let it simmer for two minutes.

Strain and serve piping hot.
